It is worth noting that this is a recipe that like all recipes should be read and shopped for before planning to cook. Good practice.
For two people or double up to have leftovers
1 litre of stock. roasted chicken bones or beef bones covered with water and a handful of salt, chopped carrot, onion and celery, bay leaf.
500g honeycomb tripe
1 tbsp toasted caraway seeds
1 tbsp paprika
2 tbsp tomato concentrate
The rind of a smoked bacon
2 onions
2 cloves of garlic
1 tbsp flour
The day before make your stock. Strains Let it cool. Refrigerate.
The day before cook your tripe in salted water and onion skins. When tender cut into slices that will fit on a spoon. Refrigerate.
The day of cook the diced onion in fat - butter, oil, pork, beef or chicken. Choose one. Add the garlic and smoked rind, if using. Toast the caraway seeds and add to the pot. Add the flour and paprika. Cook for a minute and the add the concentrated tomato. Followed by the tripe and your stock. The stock should be hot and the fat skimmed off when it’s removed from the refrigerator. Simmer the soup for one hour and check for seasoning. Add more water or stock depending on your preference.
If you can wait- let the pot go cold. Go for a walk or to an exhibition that will not remind you of food, look at the schedule at the cinema and after the immersive experience of watching other lives go home and eat your soup at a table without any distractions. Beer and bread are essential.
